ROASTED BELL PEPPER AND FETA SALAD
Portions : 4 - Preparation time : 15 minutes - Cooking time : approx. 20 minutes
Ingredients
- 3 red peppers, cut in 2
- 1 garlic clove, chopped
- 60 ml (4 tablespoons) olive oil
- 60 ml (4 tablespoons) white balsamic vinegar
- 1 pinch dried oregano
- 12 yellow cocktail tomatoes, cut into 2 or 4 pieces
- 125 ml (1/2 cup) feta cheese
- 8 bread croutons
- salt and freshly ground pepper to taste
Preparation
- Preheat oven, center rack to broil.
- On a baking sheet lined with parchment paper or a silicone mat, arrange peppers, skin side up.
- Bake until peppers are roasted.
- Pile peppers into a bowl, cover and let cool.
- Using a paring knife, remove the skin from the peppers.
- On a work surface, cut peppers into strips.
- In a bowl, combine peppers, garlic, olive oil, vinegar, oregano, tomatoes, salt and pepper. Check seasoning.
- Garnish each plate with salad, crumble the feta cheese over the top and add 2 croutons.
