Roasted bell pepper and feta salad

ROASTED BELL PEPPER AND FETA SALAD

Portions : 4 - Preparation time : 15 minutes - Cooking time : approx. 20 minutes

Ingredients

  • 3 red peppers, cut in 2
  • 1 garlic clove, chopped
  • 60 ml (4 tablespoons) olive oil
  • 60 ml (4 tablespoons) white balsamic vinegar
  • 1 pinch dried oregano
  • 12 yellow cocktail tomatoes, cut into 2 or 4 pieces
  • 125 ml (1/2 cup) feta cheese
  • 8 bread croutons
  • salt and freshly ground pepper to taste

Preparation

  1. Preheat oven, center rack to broil.
  2. On a baking sheet lined with parchment paper or a silicone mat, arrange peppers, skin side up.
  3. Bake until peppers are roasted.
  4. Pile peppers into a bowl, cover and let cool.
  5. Using a paring knife, remove the skin from the peppers.
  6. On a work surface, cut peppers into strips.
  7. In a bowl, combine peppers, garlic, olive oil, vinegar, oregano, tomatoes, salt and pepper. Check seasoning.
  8. Garnish each plate with salad, crumble the feta cheese over the top and add 2 croutons.
