POTATO SALAD WITH HOT SMOKED SALMON
Portions : 4 - Preparation time : 15 minutes - Cooking time : 30 minutes
Ingredients
- 600 g (20 ½ oz) Grelot potatoes, halved
- 60 ml (4 tablespoons) olive oil
- 2 pinches herbes de Provence
- 2 garlic cloves, chopped
- 45 ml (3 tablespoons) mayonnaise
- 60 ml (4 tablespoons) capers
- 30 ml (2 tablespoons) maple syrup
- ½ bunch chives, snipped
- 1 red onion, thinly sliced
- 1 green apple, diced
- 400 g (13 1/2 oz) hot-smoked salmon (or cold-smoked, to taste)
- Salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 200°C (400°F).
- In a bowl, combine potatoes, olive oil, herbes de Provence, garlic, salt and pepper.
- On a baking sheet lined with parchment paper or a silicone mat, spread the seasoned potatoes and bake for 30 minutes. Then leave to cool.
- In a bowl, combine potatoes, mayonnaise, capers, maple syrup, chives, red onion and green apple. Check seasoning.
- Place the potato salad on each serving plate, followed by the coarsely flaked smoked salmon.
