Potato salad with hot-smoked salmon

POTATO SALAD WITH HOT SMOKED SALMON

Portions : 4 - Preparation time : 15 minutes - Cooking time : 30 minutes

Ingredients

  • 600 g (20 ½ oz) Grelot potatoes, halved
  • 60 ml (4 tablespoons) olive oil
  • 2 pinches herbes de Provence
  • 2 garlic cloves, chopped
  • 45 ml (3 tablespoons) mayonnaise
  • 60 ml (4 tablespoons) capers
  • 30 ml (2 tablespoons) maple syrup
  • ½ bunch chives, snipped
  • 1 red onion, thinly sliced
  • 1 green apple, diced
  • 400 g (13 1/2 oz) hot-smoked salmon (or cold-smoked, to taste)
  • Salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 200°C (400°F).
  2. In a bowl, combine potatoes, olive oil, herbes de Provence, garlic, salt and pepper.
  3. On a baking sheet lined with parchment paper or a silicone mat, spread the seasoned potatoes and bake for 30 minutes. Then leave to cool.
  4. In a bowl, combine potatoes, mayonnaise, capers, maple syrup, chives, red onion and green apple. Check seasoning.
  5. Place the potato salad on each serving plate, followed by the coarsely flaked smoked salmon.
