INGREDIENTS
- 4 quality tomatoes, sliced or in segments
- 1 clove garlic, minced
- 1⁄2 red onion, thinly sliced
- 15 mL (1 tbsp) honey
- 60 mL (4 tbsp) red wine vinegar
- 120 mL (8 tbsp) olive oil
- 5 mL (1 tsp.) dried oregano
- 8 basil leaves, chopped
- 4 figs
- salt and pepper to taste
Grilled halloumi
- 1 block of halloumi (200 g) (7 oz)
- 30 mL (2 tbsp.) olive oil
- 60 mL (4 tbsp.) Ricard or other aniseed-flavoured alcohol
INSTRUCTIONS

Preheat a frying pan over high heat.

Cut Halloumi into 4 long, thin strips.

Add 30 mL (2 tbsp.) of olive oil to the hot pan and sear the cheese for 2 to 3 minutes on each side.

Flambé with Ricard and set aside.

In a bowl, combine tomatoes, garlic, red onion, honey, olive oil, vinegar, oregano, basil, salt and pepper. Check the seasoning.

Place a slice of Halloumi on each plate, spread the prepared tomato salad and the figs and serve.
