ASIAN LACQUERED PORK LOIN SANDWICH.

Ingredients
Spicy mayonnaise
- 60 ml (4 tablespoons) mayonnaise
- 60 ml (4 tablespoons) fresh coriander, chopped
- ½ clove garlic, minced
- 3 ml (1/2 tsp.) Sriracha sauce
Hairspray
- 15ml 5-spice blend
- 60 ml (4 tbsp.) honey
- 60 ml (4 tbsp) soy sauce
- 45 ml (3 tbsp) rice vinegar
- 30 ml (2 tbsp) cornstarch
- 2 garlic cloves
- 30 ml (2 tbsp) fresh ginger, chopped
The sandwich
- 4 slices Québec pork loin
- 500 ml (2 cups) water
- 250 ml (1 cup) white vinegar
- 5 ml (1 tsp.) salt
- 1 red onion, thinly sliced
- 4 Ciabatta rolls, sliced in 2
- 4 lettuce leaves
Preparation
- Preheat oven, rack in center, to 200° C (400° F), on broil.
- In a bowl, combine mayonnaise, cilantro, garlic and Sriracha sauce. Set aside
- In a bowl, mix all the ingredients for the lacquer.
- In a hot frying pan, sear the pork slices for 2 minutes on each side.
- On an ovenproof rack, arrange the pork slices and brush them with the prepared lacquer. In the oven, under the broiler, caramelize for about 3 minutes.
- Meanwhile, bring the water, vinegar and salt to the boil in a saucepan. With the heat off, plunge the red onion slices into the boiling liquid. After 1 minute, remove and drain the onion.
- Spread 1 tbsp of prepared mayonnaise on each bun, place a slice of pork on top, sprinkle with onion and add a lettuce leaf.
