NIÇOISE SANDWICH (PAN BAGNAT INSPIRATION)

Ingredients
- 2 tomatoes, sliced
- 1 green bell pepper, sliced
- 12 pitted black olives (Niçoise olives if possible)
- 3 radishes, thinly sliced
- ½ red onion, thinly sliced
- 180 ml (12 tbsp.) olive oil
- ½ clove garlic, minced
- 90 ml (6 tbsp) red wine vinegar
- 4 sandwich breads (baguette, submarine, Ciabatta)
- 2 canned tuna in oil
- 8 anchovy fillets
- 4 hard-boiled eggs, sliced
- Salt and pepper to taste.
Preparation
- In a large bowl, combine tomatoes, bell bell pepper, olives, radishes, onion, olive oil, garlic, vinegar, salt and pepper.
- Open the loaves in half and place the prepared salad, tuna, anchovies, egg slices and remaining vinaigrette on each.
- Ps: As an optional luxury, the canned tuna is replaced by fresh tuna tataki: sear, season and then slice the tuna and garnish the sandwich.
