Sandwich à la niçoise (pan bagnat inspiration)

NIÇOISE SANDWICH (PAN BAGNAT INSPIRATION)

Ingredients

  • 4 eggs
  • 2 cans tuna in oil
  • 2 tomatoes, sliced
  • 1 green bell pepper, sliced
  • 180 ml (12 tbsp) olive oil
  • 90 ml (6 tbsp) red wine vinegar
  • 12 pitted black olives (Niçoise olives if possible)
  • 4 sandwich loaves (baguette, submarine, ciabatta)
  • 8 anchovy fillets
  • ½ red onion, thinly sliced
  • 3 radishes, thinly sliced
  • ½ clove garlic, finely chopped
  • Salt and pepper to taste.

Preparation

  1. In a large bowl, combine tomatoes, bell pepper, olives, radish slices, onion, olive oil, garlic, vinegar, salt and pepper.
  2. Open the loaves in half and spread the prepared mixture, tuna, anchovies, egg slices and remaining seasoned vinaigrette on each.
  3. Ps: A deluxe version with fresh tuna tataki is also available. Replace the canned tuna by searing and seasoning the tuna steak, then slicing it to garnish the sandwich instead of the canned tuna.
