EGG AND BOURSIN SANDWICH

Ingredients
- 8 slices farmhouse bread
- 60 ml (4 tablespoons) Boursin Cuisine
- 4 eggs, hard-boiled
- 1 beet, cooked and sliced
- 8 slices bacon, cooked and crisp
- 4 Boston lettuce leaves
- Salt and pepper to taste
Preparation
- Toast the bread slices
- In a bowl, mash the hard-boiled eggs with a fork. Add the Boursin Cuisine and mix. Spread the mixture on each slice of bread.
- Divide the beet slices between four of the bread slices. Season with salt and pepper.
- Top each sandwich with bacon and salad. Close with the remaining slices of bread.
