SHREDDED HAM AND ONION COMPOTE SANDWICH WITH AMARULA
Portions : 4 to 6 - Preparation time : 15 minutes - Cooking time : 5 hours
Ingredients
- 1 knob Québec ham
- 2 onions, thinly sliced
- 2 carrots, brunoise
- 1 celery stalk, diced
- 3 garlic cloves, chopped
- 1 lemon, peeled and cut into pieces
- 4 sprigs thyme
- 250 ml (1 cup) white vinegar
- 2 l (8 cups) vegetable stock
- 15 ml (1 tbsp.) black pepper, cracked
- 5 ml (1 tsp.) salt
Onion compote with Amarula
- 2 onions, thinly sliced
- 30 ml (2 tbsp.) olive oil
- 2 garlic cloves, chopped
- 1 sprig thyme
- ½ lemon, juice
- 250 ml (1 cup) Amarula
- 125 ml (1/2 cup) stock
- Qs Sandwich rolls
- Qs arugula leaves
Preparation
- Preheat oven, rack in center, to 140°C (275°F).
- Place ham, onions, carrots, celery, garlic, lemon, thyme, vinegar, broth, pepper and salt in a roasting pan, cover and bake for 5 hours.
- Let cool, then shred the meat.
- Meanwhile, for the onion compote, brown the onions in olive oil in a hot frying pan for 2-3 minutes. Add the garlic, thyme and lemon juice.
- Deglaze with stock and reduce to dryness.
- Add Amarula and continue cooking over low heat. Reduce to obtain a creamy onion compote. Check seasoning.
- Garnish sandwich buns with ham, onion compote and arugula.
