CAMPING KING SANDWICH
Portions : 4 - Preparation : 20 minutes - Cooking time : about 15 minutes
Ingredients
- 2 Québec beef flank steaks
- 60 ml (4 tablespoons) maple syrup
- 5 ml (1 teaspoon) dried thyme
- 60 ml (4 tbsp.) cider vinegar
- 1 clove garlic, minced
- 60 ml (4 tbsp.) cooking oil
- 1 bunch Quebec asparagus, stem ends removed
- 4 jalapenos, membranes and seeds removed, halved
- 250 ml (1 cup) fresh local goat's cheese
- 30 ml (2 tbsp.) horseradish purée
- 4 Ciabatta rolls, halved
- 4 gherkins
- Salt and pepper to taste
Preparation
- Preheat barbecue to maximum.
- Cut flank steak into 2 or 3 thin cutlets.
- In a bowl, combine 15 ml (1 tbsp.) maple syrup, thyme, cider vinegar, garlic and cooking oil.
- Brush meat with mixture.
- Grill meat on barbecue for 2 to 3 minutes on each side.
- Brush asparagus and peppers with remaining maple syrup.
- Grill Jalapenos and asparagus over high heat for 6 to 8 minutes, turning regularly.
- Season with salt and pepper, then cut the asparagus in half.
- In a bowl, combine the fresh goat's cheese, horseradish, salt and pepper. Check seasoning.
- Lightly toast the Ciabatta rolls.
- Divide the prepared goat's cheese, asparagus, jalapenos and grilled beef among the sandwiches. Close each sandwich and stick a pickle on top with a pick.
