Pomodoro sauce

POMODORO SAUCE

Portions : 4 - Preparation : 10 minutes - Cooking : 20 minutes

Ingredients

  • 1 onion, finely chopped
  • 125 ml (1/2 cup) carrot, grated
  • 90 ml (6 tablespoons) olive oil
  • 2 garlic cloves, chopped
  • 5 ml (1 tsp.) herbes de Provence blend
  • 625 ml (2 ½ cups) tomato coulis
  • Salt and pepper to taste
  • Chili pepper to taste

Topping

  • 60 ml (4 tbsp.) grated Parmesan cheese
  • 1 small ball mozzarella

Preparation

  1. In a hot skillet over medium heat, sauté the onion and carrot in olive oil for 3 minutes.
  2. Add the garlic and herbes de Provence and cook for a further 2 minutes, stirring constantly.
  3. Add the tomato coulis and cook over low heat for 15 minutes. Check seasoning.
