Ingredients
- 250 ml (1 cup) butter
- 1 lemon, zest
- 1 orange, zest
- 125 ml (½ cup) parsley leaves
- 2 cloves garlic
- 15 ml (1 tbsp) sweet smoked paprika
- 30 ml (2 tbsp) pink pepper
- 250 ml (1 cup) breadcrumbs
- 125 ml (½ cup) Panko breadcrumbs
- 1 salmon fillet
- Salt and pepper to taste
The sauce
- 250 ml (1 cup) plain yogurt
- 30 ml (2 tbsp) white balsamic vinegar
- 1 lemon, juice
- Qs Tabasco sauce
Preparation
- Preheat the oven, rack in the middle, to 200 °C (400 °F).
- In the bowl of a food processor, pulse the butter, lemon and orange zest, parsley, garlic, paprika, pink peppercorns, breadcrumbs, Panko breadcrumbs, salt and pepper to a paste.
- On a baking sheet lined with a silicone mat, place the salmon fillet, spread the prepared mixture on top and bake for 20 to 25 minutes, depending on the thickness of the fillet.
- In a bowl, mix the yogurt, balsamic vinegar, lemon juice, salt, pepper and a few drops of Tabasco to taste. Check the seasoning.
- Serve the fish, accompanied by the prepared yogurt, green vegetables and pearl barley or rice.
