Citrus-crusted salmon

Ingredients

  • 250 ml (1 cup) butter
  • 1 lemon, zest
  • 1 orange, zest
  • 125 ml (½ cup) parsley leaves
  • 2 cloves garlic
  • 15 ml (1 tbsp) sweet smoked paprika
  • 30 ml (2 tbsp) pink pepper
  • 250 ml (1 cup) breadcrumbs
  • 125 ml (½ cup) Panko breadcrumbs
  • 1 salmon fillet
  • Salt and pepper to taste

The sauce

  • 250 ml (1 cup) plain yogurt
  • 30 ml (2 tbsp) white balsamic vinegar
  • 1 lemon, juice
  • Qs Tabasco sauce

Preparation

  1. Preheat the oven, rack in the middle, to 200 °C (400 °F).
  2. In the bowl of a food processor, pulse the butter, lemon and orange zest, parsley, garlic, paprika, pink peppercorns, breadcrumbs, Panko breadcrumbs, salt and pepper to a paste.
  3. On a baking sheet lined with a silicone mat, place the salmon fillet, spread the prepared mixture on top and bake for 20 to 25 minutes, depending on the thickness of the fillet.
  4. In a bowl, mix the yogurt, balsamic vinegar, lemon juice, salt, pepper and a few drops of Tabasco to taste. Check the seasoning.
  5. Serve the fish, accompanied by the prepared yogurt, green vegetables and pearl barley or rice.
