HONEY-GRILLED SALMON
Portions : 4 - Preparation : 10 minutes - Cooking time : 30 minutes
Ingredients
- 4 salmon steaks
- 30 ml (2 tablespoons) cooking oil
- 60 ml (4 tablespoons) honey
- 15 ml (1 tbsp.) steak spice blend
- 30 ml (2 tbsp.) butter
- salt and pepper to taste
Broccoli
- 60 ml (4 tbsp.) olive oil
- 15 ml (1 tbsp) honey
- 1 clove garlic, minced
- 60 ml (4 tbsp.) white balsamic vinegar
- 2 stalks broccoli, chopped
- 125 ml (1/2 cup) almonds, crushed
- 125 ml (1/2 cup) pistachios
- 250 ml (1 cup) Oîkos Greek yogurt
- Salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 190°C (375°F).
- In a hot skillet, sear salmon in a little fat for 2 minutes on each side.
- Add honey and steak spices, reduce heat, add butter and continue cooking, 3 to 4 minutes, while coating fish with melted butter.
- For the broccoli, in a bowl, combine the olive oil, honey, garlic clove, balsamic vinegar and broccoli.
- Add almonds, pistachios and check seasoning.
- On an ovenproof tray lined with parchment paper or a silicone mat, spread the broccoli and sauce and bake for 30 minutes.
- Just before serving, toss the broccoli with the Greek yogurt.
- Serve salmon with prepared broccoli.
