GRILLED SALMON HONEY AND CUCUMBER SALSA

Ingredients
The salmon
- 4 salmon steaks
- 125 ml (1/2 cup) salt
- 125 ml (1/2 cup) sugar
- 60 ml (4 tbsp.) olive oil
- 30 ml (2 tablespoons) butter
- 5 ml (1 tsp.) dried thyme
- Salt and pepper to taste
The salsa
- 1 English cucumber, finely diced
- 1 apple, diced
- 1 shallot, minced
- 1/2 Thai chili pepper, seeds and white membrane removed, finely chopped
- 30 ml (2 tbsp.) honey or maple syrup
- 15 ml (1 tbsp.) mint leaves, chopped
- 15 ml (1 tbsp.) dill, chopped
- 1 lemon, juice
- 90 ml (6 tbsp) olive oil
- salt and pepper to taste
Side dish
- 4 portions white rice or other cereal of your choice
Preparation
- Combine the salt and sugar in a dish and generously coat the salmon steaks. Refrigerate for 30 minutes.
- Under cold running water, rinse salmon steaks to remove all salt and sugar.
- Pat salmon dry with paper towels.
- In a hot frying pan, sear the salmon steaks in a little oil for 3 minutes on each side.
- Reduce the heat to medium-low, add the butter and thyme and continue cooking for 5 minutes, turning the steaks from time to time to coat them with the butter.
- In a bowl, combine the cucumber, apple, shallot, chilli, honey, mint, dill, lemon juice and olive oil. Check the seasoning.
- Place a salmon steak on each plate, spoon over the prepared salsa and serve, accompanied by the cereal of your choice.
