Maple and miso roasted salmon

Cooking time : 20 minutes

Ingredients

  • 125 ml (½ cup) maple syrup
  • 125 ml (½ cup) Panko breadcrumbs
  • 125 ml (½ cup) miso
  • 2 garlic cloves, chopped
  • 30 ml (2 tablespoons) olive oil
  • 600 gr (20 ½ oz) salmon fillet hearts
  • 4 portions oven-roasted potatoes
  • 60 ml (4 tbsp.) sour cream
  • 60 ml (4 tbsp) chives, snipped
  • Salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 200°C (400°F).
  2. In a bowl, combine maple syrup, miso, breadcrumbs, garlic and oil.
  3. Place salmon in an ovenproof dish or baking sheet, brush with mixture and bake for 20 minutes.
  4. Serve with roasted potatoes, sour cream and chives.
