SALMON SAUTÉ WITH SPANISH VEGETABLES
Portions : 4 - Preparation : 5 minutes - Cooking time : 8 to 10 minutes
Ingredients
- 400 g (13 1/2 oz) salmon, cubed
- 1 onion, thinly sliced
- 90 ml (6 tablespoons) olive oil
- 2 red peppers, julienned
- 500 ml (2 cups) fresh spinach leaves
- 125 ml (½ cup) green olives
- 15 ml (1 tbsp.) sweet paprika
- 1 pinch saffron
- 250 ml (1 cup) vegetable stock
- 125 ml (½ cup) 35% cream
- 2 garlic cloves, minced
- 60 ml (4 tbsp.) parsley leaves, chopped
- 60 ml (4 tbsp.) chives, snipped
- salt and pepper to taste
- 4 portions cooked white rice
Preparation
- In a frying pan, brown the salmon and onion in the oil until golden.
- Add peppers, spinach, olives, paprika, saffron, broth and cream and sauté for 5 minutes.
- Add parsley and chives and stir. Check seasoning.
- Serve with rice.
