Beef and white bean short ribs

BEEF AND WHITE BEAN SHORT RIBS

Portions : 4 - Preparation time : 10 minutes - Cooking time : about 4 hours

Ingredients

  • 4 beef short ribs
  • 60 ml (4 tablespoons) olive oil
  • 1 onion, thinly sliced
  • 500 ml (2 cups) red wine
  • 30 ml (2 tbsp.) tomato paste
  • 500 ml (2 cups) beef broth
  • 30 ml (2 tbsp.) Worcestershire sauce
  • 125 ml (1/2 cup) maple syrup
  • 15 ml (1 tbsp.) sweet paprika
  • 15 ml (1 tbsp.) cumin seeds, ground
  • 15 ml (1 tbsp.) coriander seeds, ground
  • 30 ml (2 tbsp.) ginger, chopped
  • 2 garlic cloves, chopped
  • 500 ml (2 cups) white beans

Toppings

  • Carrot and parsnip purée
  • French fries
  • Sautéed green beans

Preparation

  1. Preheat oven, rack in center, to 160°C (325°F).
  2. Heat olive oil in a casserole dish, add short ribs and brown on both sides for two to three minutes.
  3. Add the onion, continue cooking for 2 minutes, then deglaze with the red wine.
  4. Add tomato paste, beef stock, Worcestershire sauce, paprika, cumin, coriander, ginger and garlic, bring to the boil and bake for 3 hours.
  5. Add the beans and cook for a further 1 hour.
  6. Check seasoning before serving.
