GOURMET ONION SOUP
Portions : 4 - Preparation : 15 minutes - Cooking : 30 minutes
Ingredients
- 4 white onions
- 60 ml (4 tablespoons) butter
- 60 ml (4 tablespoons) maple syrup
- 4 yellow onions, chopped
- 4 red onions, chopped
- 2 l (8 cups) chicken broth
- 4 garlic cloves, chopped
- 1 bay leaf
- 2 pinches herbes de Provence
- 45 ml (3 tbsp.) fat of your choice (butter, oil or Mycryo cocoa butter)
- Salt and pepper to taste
- 4 slices bacon, crisp
- 8 baguette croutons
- 250 ml (1 cup) grated Gruyère cheese
Preparation
- Preheat oven, rack in center, to 190° C (375° F).
- Slice the 4 white onions into segments, leaving the root intact.
- Place the onions on an ovenproof baking sheet and spread the butter, maple syrup, salt and pepper over them. Bake in the oven for 20 minutes, or long enough for them to be cooked and colored.
- Meanwhile, in a saucepan with a little fat of your choice, sauté the chopped onions until golden-brown. Add the stock, garlic, bay leaf and herbes de Provence and simmer for 20 minutes over high heat. Check seasoning.
- In each soup plate, place an onion removed from the oven, then spread the broth with the onions, add 2 croutons, grated cheese and a slice of bacon.
