CHILI CON CARNE SOUP
Portions : 4 - Preparation : 5 minutes - Cooking time : 35 minutes
Ingredients
- 450 g (1 lb) ground beef
- 1 onion, chopped
- 60 ml (4 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
- 500 ml (2 cups) canned kidney beans, rinsed and drained
- 15 ml (1 tbsp.) sweet smoked paprika
- 15 ml (1 tbsp.) coriander seeds, ground
- 15 ml (1 tbsp.) brown sugar
- 2 garlic cloves, minced
- 1 l (4 cups) beef broth
- 1 l (4 cups) tomato sauce
- 500 ml (2 cups) tomatoes, crushed
- 125 ml (½ cup) red wine
- 60 ml (4 tablespoons) fresh coriander leaves, chopped
- 60 ml (4 tbsp.) sour cream
- salt and pepper to taste
Preparation
- In a saucepan with a little fat, brown the meat and onion in the fat of your choice.
- Add the beans, paprika, ground coriander, brown sugar, garlic, broth, tomato sauce, crushed tomatoes and red wine, and simmer over low heat for 30 minutes. Check seasoning.
- Serve the soup, sprinkled with fresh coriander and accompanied by sour cream.
