Creamy roast pork soup

CREAMY ROAST PORK SOUP

Portions : 4 - Preparation : 15 minutes - Cooking : 15 minutes

Ingredients

  • 2 L (8 cups) beef broth
  • 45 ml (3 tablespoons) silken tofu
  • 5 ml (1 tsp.) miso
  • 15 ml (1 tbsp.) Sambal Oelek
  • 30 ml (2 tbsp.) sesame oil
  • 2 garlic cloves, chopped
  • 4 bok choy, cut into 4 pieces
  • 4 portions Asian egg noodles (ramen)
  • 2 green onions, chopped
  • 12 thin slices Quebec pork roast, cooked
  • 125 ml (1/2 cup) fresh coriander, chopped

Preparation

  1. Bring beef broth to a boil in a saucepan. Add the tofu, miso and Sambal Oelek and simmer for 5 minutes.
  2. Add the sesame oil, garlic and bok choy and cook for a further 10 minutes.
  3. Meanwhile, cook the noodles in a saucepan with plenty of water, according to the manufacturer's instructions.
  4. In each bowl, divide the noodles, green onions, bok choy and sliced roast pork.
  5. Pour over the broth and finish with the coriander.
