CREAMY ROAST PORK SOUP

Ingredients
- 2 L (8 cups) beef broth
- 45 ml (3 tablespoons) silken tofu
- 5 ml (1 tsp.) miso
- 15 ml (1 tbsp.) Sambal Oelek
- 30 ml (2 tbsp.) sesame oil
- 2 garlic cloves, chopped
- 4 bok choy, cut into 4 pieces
- 4 portions Asian egg noodles (ramen)
- 2 green onions, chopped
- 12 thin slices Quebec pork roast, cooked
- 125 ml (1/2 cup) fresh coriander, chopped
Preparation
- Bring beef broth to a boil in a saucepan. Add the tofu, miso and Sambal Oelek and simmer for 5 minutes.
- Add the sesame oil, garlic and bok choy and cook for a further 10 minutes.
- Meanwhile, cook the noodles in a saucepan with plenty of water, according to the manufacturer's instructions.
- In each bowl, divide the noodles, green onions, bok choy and sliced roast pork.
- Pour over the broth and finish with the coriander.
