Green Pea Soup with Mint

Ingredients

  • 1 onion, chopped
  • 30 ml (2 tbsp) fat of your choice (butter, oil, Mycryo cocoa butter)
  • 2 cloves garlic, chopped
  • 500 ml (2 cups) frozen green peas
  • 1 L (4 cups) chicken broth
  • 60 ml (4 tbsp) fresh mint, chopped
  • 125 ml (1/2 cup) 35% cream
  • Salt and pepper to taste

Preparation

  1. In a saucepan, brown the onion for 2 to 3 minutes in the fat of your choice.
  2. Add the garlic, then the frozen peas. Cover with chicken broth, bring to a boil and cook for 30 minutes over medium heat.
  3. Add the mint and, using a hand blender, blend everything together.
  4. Add the cream and check the seasoning.
