Ingredients
- 1 onion, chopped
- 30 ml (2 tbsp) fat of your choice (butter, oil, Mycryo cocoa butter)
- 2 cloves garlic, chopped
- 500 ml (2 cups) frozen green peas
- 1 L (4 cups) chicken broth
- 60 ml (4 tbsp) fresh mint, chopped
- 125 ml (1/2 cup) 35% cream
- Salt and pepper to taste
Preparation
- In a saucepan, brown the onion for 2 to 3 minutes in the fat of your choice.
- Add the garlic, then the frozen peas. Cover with chicken broth, bring to a boil and cook for 30 minutes over medium heat.
- Add the mint and, using a hand blender, blend everything together.
- Add the cream and check the seasoning.
