Green pea and corn soup

Serves : 4

Cooking time : 17 minutes

Ingredients

  • 1 onion, thinly sliced
  • 30 ml (2 tablespoons) olive oil
  • 1.5 l (6 cups) chicken broth
  • 250 ml (1 cup) corn seeds
  • 30 ml (2 tbsp.) maple syrup
  • 1 lemon, juice
  • 500 ml (2 cups) green peas
  • 1 clove garlic, minced
  • 250 ml (1 cup) bread croutons
  • 60 ml (4 tbsp.) grated Parmesan cheese
  • Salt and pepper to taste

Preparation

  1. In a saucepan, sauté onion in olive oil for 2 minutes.
  2. Add broth, corn, maple syrup and lemon juice and cook for 10 minutes.
  3. Add green peas and cook for 5 minutes. Check seasoning.
  4. Serve with croutons and a sprinkling of Parmesan cheese.

NB: For a heartier soup, when everything is cooked, blend in a hand blender and, over medium heat, reduce by a third. This is an ideal mealtime soup.
