Ingredients
- 1 onion, thinly sliced
- 30 ml (2 tablespoons) olive oil
- 1.5 l (6 cups) chicken broth
- 250 ml (1 cup) corn seeds
- 30 ml (2 tbsp.) maple syrup
- 1 lemon, juice
- 500 ml (2 cups) green peas
- 1 clove garlic, minced
- 250 ml (1 cup) bread croutons
- 60 ml (4 tbsp.) grated Parmesan cheese
- Salt and pepper to taste
Preparation
- In a saucepan, sauté onion in olive oil for 2 minutes.
- Add broth, corn, maple syrup and lemon juice and cook for 10 minutes.
- Add green peas and cook for 5 minutes. Check seasoning.
- Serve with croutons and a sprinkling of Parmesan cheese.
NB: For a heartier soup, when everything is cooked, blend in a hand blender and, over medium heat, reduce by a third. This is an ideal mealtime soup.
