CREAMY EDAMAME SOUP
Portions : 4 - Preparation : 5 minutes - Cooking time : 22 minutes
Ingredients
- 1 onion, chopped
- 60 ml (4 tablespoons) olive oil
- 1 l (4 cups) chicken broth
- 250 ml (1 cup) wine
- 250 ml (1 cup) milk
- 125 ml (1/2 cup) 35% cream
- 1 l (4 cups) frozen edamame beans
- 2 garlic cloves, chopped
- 5 ml (1 tsp.) wasabi
- Salt and pepper to taste
Preparation
- In a saucepan, sauté onion in olive oil for 2 minutes.
- Add broth, wine, cream, beans, garlic and wasabi and cook for 20 minutes over medium heat.
- Remove half the beans and set aside in a bowl.
- Using a hand blender, purée the remaining contents of the pan. Check seasoning.
- Add the remaining beans to the pan.
- Serve with bread croutons and butter.
