Creamy edamame soup

CREAMY EDAMAME SOUP

Portions : 4 - Preparation : 5 minutes - Cooking time : 22 minutes

Ingredients

  • 1 onion, chopped
  • 60 ml (4 tablespoons) olive oil
  • 1 l (4 cups) chicken broth
  • 250 ml (1 cup) wine
  • 250 ml (1 cup) milk
  • 125 ml (1/2 cup) 35% cream
  • 1 l (4 cups) frozen edamame beans
  • 2 garlic cloves, chopped
  • 5 ml (1 tsp.) wasabi
  • Salt and pepper to taste

Preparation

  1. In a saucepan, sauté onion in olive oil for 2 minutes.
  2. Add broth, wine, cream, beans, garlic and wasabi and cook for 20 minutes over medium heat.
  3. Remove half the beans and set aside in a bowl.
  4. Using a hand blender, purée the remaining contents of the pan. Check seasoning.
  5. Add the remaining beans to the pan.
  6. Serve with bread croutons and butter.
