MEAL SOUP WITH ASIAN BROTH AND THIN SLICES OF BEEF

Ingredients
- 4 portions rice noodles
- 2 l (8 cups) beef broth
- 15 ml (1 tablespoon) ginger, chopped
- 2 garlic cloves, chopped
- 5 ml (1 tsp.) Chinese five-spice blend
- 60 ml (4 tbsp.) soy sauce
- 5 ml (1 tsp.) Sambal Oelek hot sauce
- 1 onion, thinly sliced
- 400 gr (13 1/2 oz) fondue meat, thinly sliced
- 500 ml (2 cups) bean sprouts
- 2 green onions, sliced
- ½ bunch coriander, leaves removed, chopped
Preparation
- Soak the rice noodles in plenty of cold water for 10 minutes.
- Meanwhile, in a saucepan, bring the stock to the boil, add the ginger, garlic, 5-spice mix, soy sauce, Sambal Oelek, onion and cook for 20 minutes. Check the seasoning.
- Meanwhile, drain the noodles.
- Divide the noodles, beef slices, bean sprouts, green onion and coriander between the bowls, add the hot broth and serve.
