Salmon and bean soup

Ingredients

1 leek, thinly sliced

60 ml (4 tbsp) olive oil

2 cloves garlic, minced

500 ml (2 cups) cubed salmon

500 ml (2 cups) milk

500 ml (2 cups) vegetable broth

250 ml (1 cup) cooked potatoes, cubed

60 ml (4 tbsp) dill, chopped

15 ml (1 tbsp) maple syrup

250 ml (1 cup) edamame beans

Salt and pepper to taste

Preparation

In a saucepan, sauté the leek in olive oil for 2 to 3 minutes.

Add the garlic and salmon and sauté for another 2 minutes.

Add milk, broth, potato cubes, dill, syrup, edamame beans and cook for 10 minutes. Check the seasoning.
