PORK LOIN STEAK
Portions : 4 - Preparation : 5 minutes - Cooking time : 10 to 15 minutes
Ingredients
- 4 Québec pork loin steaks
- 60 ml (4 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
- 1 onion, thinly sliced
- 2 garlic cloves, minced
- 30 ml (2 tbsp.) pink pepper, cracked
- 60 ml (4 tbsp.) coriander seeds, crushed
- 60 ml (4 tbsp.) honey
- 125 ml (½ cup) white wine
- 125 ml (1/2 cup) vegetable stock
- 90 ml (6 tbsp) parsley leaves, chopped
- Salt and pepper to taste
Preparation
- In a hot skillet, sear meat coated with Mycryo butter or in the fat of your choice, 1 to 2 minutes on each side. Remove and set aside.
- In the same pan, brown the onion for 2 to 3 minutes.
- Add garlic, pink pepper, coriander, parsley, honey and caramelize for 1 minute.
- Add the white wine and reduce slightly.
- Then add the stock, the meat and finish cooking the meat in the sauce over a low heat, basting it regularly with the sauce.
