INGREDIENTS
- 1 pure butter puff pastry (store-bought)
- 125 ml (1/2 cup) tomato pizza sauce
- 8 slices pepperoni or cooked ham, finely chopped
- 250 ml (1 cup) mozzarella cheese
- 8 basil leaves, chopped
- 2 pinches herbes de Provence blend
- 125 ml (½ cup) grated Parmesan cheese
PREPARATION
- Preheat oven, rack in center, to 190°C (375°F).
- On work surface, roll out puff pastry.
- Spread the tomato sauce over the dough, then divide between the cold cuts, mozzarella, basil and herbes de Provence.
- Roll the pastry into a tight ball. Refrigerate for 1 hour.
- Cut the boudin into ½-inch-thick slices and hold each slice with a wooden pick.
- On an ovenproof baking sheet lined with a silicone mat, spread out the slices, sprinkle with Parmesan and bake for 20 minutes, until golden brown.
- Let cool before serving.
