Beef sirloin with sweet onion jam

Ingredients

Onion Jam

  • 2 onions, thinly sliced
  • 30 ml (2 tbsp) butter
  • 1 to 2 oz whiskey
  • 2 cloves garlic, minced
  • 90 ml (6 tbsp) fig jam
  • 30 ml (2 tbsp) red wine vinegar
  • Salt and pepper to taste

Sirloin

  • 250 ml (1 cup) panko breadcrumbs
  • 2 cloves garlic, minced
  • 90 ml (6 tbsp) parsley leaves, chopped
  • 125 ml (½ cup) olive oil
  • 30 ml (2 tbsp) hot mustard
  • 45 ml (3 tbsp) horseradish
  • 2 large sirloin steaks (about 400 g (13 1/2 oz) each)
  • 30 ml (2 tbsp) fat of your choice (butter, oil or Mycryo cocoa butter)
  • Salt and pepper to taste

Preparation

  1. Preheat the oven, rack in the center to 230 °C (450 °F).
  2. In a hot pan, brown the onions in the butter until browned. Deglaze with whisky, flambé everything then add the garlic, fig jam, vinegar, salt, pepper and let stew over low heat for 10 minutes. Check the seasoning. Set aside.
  3. In the meantime, in a bowl, mix the breadcrumbs, garlic, parsley, olive oil, mustard, horseradish, salt and pepper.
  4. In a hot pan, brown the steaks, coated with Mycryo butter or in the fat of your choice, for 2 minutes on each side. Salt and pepper.
  5. On a baking sheet, place and cover the steaks with the prepared mixture then cook in the oven for 15 minutes.
  6. Serve the meat, accompanied by onion jam and homemade fries.
