Ingredients
- 12 6-inch corn tortillas
- 1 small cauliflower
- 1 cup of flour
- 3 eggs
- 1 cup seasoned breadcrumbs (salt, pepper, spices of your choice: paprika, curry, coriander powder, etc.)
- 1 liter of vegetable oil (canola, sunflower, peanut, etc.)
- 8 cocktail tomatoes
- 1/4 shredded red cabbage
- 1 cup corn
- 2 ripe avocados
- 1/3 cup (80 ml or 6 tablespoons) sour cream
- the juice of a lime
- 1/2 bunch of coriander leaves
- salt / pepper / chili to taste
Preparation
- Prepare all the garnishes in separate bowls and set aside: cocktail tomatoes cut into 4, finely grated red cabbage, lightly vinegared and salted if desired, and drained corn.
- Boil water in a pot. Meanwhile, prepare the cauliflower: remove the leaves and cut into walnut-sized pieces. Salt the water once it boils and add the cauliflower pieces. Let it cook for about 3 minutes after it returns to a boil. The cauliflower should still be firm in the center. Test with the tip of a knife. Remove the cauliflower pieces with a spider or slotted spoon and drain them.
- Coat the cauliflower pieces in flour, then in beaten egg, and finally in breadcrumbs. Set aside.
- Preheat the oil in a deep fryer to 375°F or 190°C, or in a deep pan if you don't have a deep fryer (with a thermometer to check the oil temperature). You can also use an air fryer.
- In the bowl of a small food processor, combine the avocado, sour cream, lime juice, a little cilantro, salt, pepper, and a little chili powder if desired. Blend until you have a nice, smooth, thick avocado cream.
- In a hot, lightly oiled pan, brown the corn tortillas one by one. If they dry out quickly, fold them into a double-sided shape, ready to be filled with the filling.
- Fry the cauliflower pieces until they are nicely browned. Remove them, place them on absorbent paper, and season with salt.
- Spread the avocado cream over the corn tortillas. Add the fried cauliflower pieces and arrange the other toppings, including the cilantro, and it's ready to eat!
- You can also drizzle it all with hot sauce and a little lime juice.
- Fried cauliflower could easily be replaced with chicken, fish or even shrimp, fried or not.
- Everyone can also make their own tacos. Simply bring everything to the table and let each guest compose their own tacos according to their tastes (and it's less work for the person cooking).
