PORK TACOS
Portions : 4 - Preparation : 15 minutes - Cooking time : 5 hours
Ingredients
- 1.5 kg (3 lb) Québec pork shoulder
- 1.5 l (6 cups) vegetable broth
- 4 onions, chopped
- 60 ml (4 tbsp.) maple syrup
- 60 ml (4 tbsp.) tomato paste
- 60 ml (4 tbsp.) Tex-Mex spice blend
- salt and pepper to taste
Toppings
- 8 to 12 wheat or corn tortillas
- 125 ml (1/2 cup) red onion, chopped
- 125 ml (1/2 cup) fresh coriander leaves, chopped
- 125 ml (1/2 cup) sour cream
- 1 avocado, cubed
- 125 ml (1/2 cup) cheddar cheese, grated
Preparation
- Preheat oven, rack in center, to 160°C (325°F).
- Place pork, broth, onions, maple syrup, tomato paste and Tex-Mex spices in a roasting pan, casserole or ovenproof dish, cover and bake for 5 hours.
- Remove the meat from the oven and add a little cooking liquid to keep it juicy. Check seasoning.
- Garnish each tortilla with the shredded meat and toppings of your choice.
