Pork tacos with salsa

PORK AND SALSA TACOS

Portions : 4 - Preparation : 10 minutes - Cooking time : 6 to 8 minutes

Ingredients

  • 1 Québec pork tenderloin
  • 30 ml (2 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
  • 1 clove garlic, minced
  • 1 red onion, thinly sliced
  • 5 ml (1 tsp.) ground cumin seeds
  • 5 ml (1 tsp.) paprika
  • 5 ml (1 tsp.) oregano
  • 30 ml (2 tbsp.) balsamic vinegar
  • 30 ml (2 tbsp.) olive oil
  • 1 mango, cubed
  • 1 tomato, cubed
  • 8 wheat tortillas
  • 4 lettuce leaves, chopped
  • salt and freshly ground pepper to taste

Preparation

  1. Cut pork tenderloin in half lengthwise. Then cut into 1-inch-thick slices.
  2. In a hot skillet, brown the meat slices, coated with Mycryo butter, or in the fat of your choice, for 2 minutes on each side. Add the garlic, red onion, cumin, paprika and oregano and cook for a further 2 minutes. Add salt and pepper and check seasoning.
  3. In a bowl, mix vinegar, oil, mango, tomato, salt and pepper. Check the seasoning.
  4. Top tortillas with meat, salsa and a little lettuce.
