PORK AND SALSA TACOS
Portions : 4 - Preparation : 10 minutes - Cooking time : 6 to 8 minutes
Ingredients
- 1 Québec pork tenderloin
- 30 ml (2 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
- 1 clove garlic, minced
- 1 red onion, thinly sliced
- 5 ml (1 tsp.) ground cumin seeds
- 5 ml (1 tsp.) paprika
- 5 ml (1 tsp.) oregano
- 30 ml (2 tbsp.) balsamic vinegar
- 30 ml (2 tbsp.) olive oil
- 1 mango, cubed
- 1 tomato, cubed
- 8 wheat tortillas
- 4 lettuce leaves, chopped
- salt and freshly ground pepper to taste
Preparation
- Cut pork tenderloin in half lengthwise. Then cut into 1-inch-thick slices.
- In a hot skillet, brown the meat slices, coated with Mycryo butter, or in the fat of your choice, for 2 minutes on each side. Add the garlic, red onion, cumin, paprika and oregano and cook for a further 2 minutes. Add salt and pepper and check seasoning.
- In a bowl, mix vinegar, oil, mango, tomato, salt and pepper. Check the seasoning.
- Top tortillas with meat, salsa and a little lettuce.
