Ingredients
- 2 lemons, halved
- 60 ml (4 tablespoons) olive oil
- 24 shrimp 16/20, peeled
- 5 ml (1 tsp.) mild smoked paprika
- 1 onion, minced
- 2 garlic cloves, minced
- 2 lemons, lees
- 15 ml (1 tbsp.) honey
- 125 ml (½ cup) 35% cream
- 125 ml (½ cup) vegetable stock
- 500 ml (2 cups) cherry tomatoes, halved
- 60 ml (4 tbsp.) parsley leaves, chopped
- 4 portions cooked pasta
- Salt and pepper to taste
Preparation
- In a hot grill pan or non-stick skillet, over medium heat, toast the lemon halves in olive oil for 4 minutes.
- Meanwhile, in the hot pan, sear the shrimps for 1 minute on each side.
- Add paprika, onion, garlic, lemon juice, honey, cream and stock. Check seasoning.
- Add tomatoes, parsley, cooked pasta and toss. The sauce should coat the pasta.
- Serve with grilled lemons, to be squeezed before serving.
