Tapas, herb butter and shrimp tartine

Ingredients

  • 16 peeled shrimp 16/20
  • 60 ml (4 tablespoons) olive oil
  • 5 ml (1 tsp.) ginger, chopped
  • 1 lemon, juice
  • 4 green onions, cut into 2” chunks
  • 60 ml (4 tbsp.) butter, softened
  • 90 ml (6 tbsp) coriander leaves, chopped
  • 90 ml (6 tbsp) mint leaves, chopped
  • 1 clove garlic, chopped
  • 4 slices warm toasted bread
  • 12 cherry tomatoes, quartered
  • Salt and pepper to taste

Preparation

  1. Preheat barbecue to maximum.
  2. In a bowl, combine shrimp, olive oil, ginger, lemon juice, salt and pepper.
  3. Grill the shrimp and green onion sections on the barbecue for 1 minute on each side.
  4. In a bowl, using a spatula, combine butter, coriander, mint, garlic, salt and pepper.
  5. Spread the prepared butter on the hot, toasted bread and allow to melt.
  6. On each slice of bread, arrange the shrimp, tomatoes and slices of green onion.
