Ingredients
- 16 peeled shrimp 16/20
- 60 ml (4 tablespoons) olive oil
- 5 ml (1 tsp.) ginger, chopped
- 1 lemon, juice
- 4 green onions, cut into 2” chunks
- 60 ml (4 tbsp.) butter, softened
- 90 ml (6 tbsp) coriander leaves, chopped
- 90 ml (6 tbsp) mint leaves, chopped
- 1 clove garlic, chopped
- 4 slices warm toasted bread
- 12 cherry tomatoes, quartered
- Salt and pepper to taste
Preparation
- Preheat barbecue to maximum.
- In a bowl, combine shrimp, olive oil, ginger, lemon juice, salt and pepper.
- Grill the shrimp and green onion sections on the barbecue for 1 minute on each side.
- In a bowl, using a spatula, combine butter, coriander, mint, garlic, salt and pepper.
- Spread the prepared butter on the hot, toasted bread and allow to melt.
- On each slice of bread, arrange the shrimp, tomatoes and slices of green onion.
