Christmas beef tartare

Tartare de boeuf de noël

Ingredients

  • 15 ml (1 tablespoon) soy sauce
  • 15 ml (1 tablespoon) red balsamic vinegar
  • 30 ml (2 tablespoons) olive oil
  • 15 ml (1 tbsp) strong mustard
  • 300 gr (10 oz) beef tartare, cubed
  • 90 ml (6 tbsp) parsley leaves, chopped
  • 90 ml (6 tbsp) chives, snipped
  • 1 shallot, chopped
  • 4 slices foie gras au torchon or poultry liver pâté.
  • 10 ml (2 tsp.) cranberry jam
  • Salt and pepper to taste
  • Qs baguette croutons (salt, pepper and olive oil)

Preparation

  1. In a bowl, mix soy sauce, balsamic vinegar, olive oil and mustard.
  2. Add the meat cubes, stir, then add the parsley, chives and shallot. Check the seasoning.
  3. Divide the prepared tartar between each plate, adding a slice of foie gras on each portion and a touch of cranberry jam.
  4. Serve with croutons.
