Ingredients
- 15 ml (1 tablespoon) soy sauce
- 15 ml (1 tablespoon) red balsamic vinegar
- 30 ml (2 tablespoons) olive oil
- 15 ml (1 tbsp) strong mustard
- 300 gr (10 oz) beef tartare, cubed
- 90 ml (6 tbsp) parsley leaves, chopped
- 90 ml (6 tbsp) chives, snipped
- 1 shallot, chopped
- 4 slices foie gras au torchon or poultry liver pâté.
- 10 ml (2 tsp.) cranberry jam
- Salt and pepper to taste
- Qs baguette croutons (salt, pepper and olive oil)
Preparation
- In a bowl, mix soy sauce, balsamic vinegar, olive oil and mustard.
- Add the meat cubes, stir, then add the parsley, chives and shallot. Check the seasoning.
- Divide the prepared tartar between each plate, adding a slice of foie gras on each portion and a touch of cranberry jam.
- Serve with croutons.
