Ingredients
- 400 g (14 oz) salmon fillet, trimmed, brunoise style
- 2 green apples, finely julienned
- 15 ml (1 tbsp.) dill, chopped
- 15 ml (1 tbsp.) coriander leaves, chopped
- 15 ml (1 tbsp.) chives, finely chopped
- 15 ml (1 tbsp) shallot, chopped
- 15 ml (1 tbsp.) capers, chopped
- 1 lemon, zest
- 15 ml (1 tbsp.) apple cider vinegar
- 30 ml (2 tbsp) olive oil
- Bread croutons
- Salt and pepper to taste.
Preparation
- In a bowl, combine salmon, apples, dill, coriander, chives, shallots, capers, lemon zest, apple cider vinegar and olive oil. Cover and refrigerate for 1 hour. Check seasoning.
- Serve with bread croutons.
NB: For a leaner tartar, choose wild salmon.
