Salmon tartar with herbs and green apples

Serves : 4

Preparation time: 15 minutes

Maceration time : 60 minutes

Ingredients

  1. 400 g (14 oz) salmon fillet, trimmed, brunoise style
  2. 2 green apples, finely julienned
  3. 15 ml (1 tbsp.) dill, chopped
  4. 15 ml (1 tbsp.) coriander leaves, chopped
  5. 15 ml (1 tbsp.) chives, finely chopped
  6. 15 ml (1 tbsp) shallot, chopped
  7. 15 ml (1 tbsp.) capers, chopped
  8. 1 lemon, zest
  9. 15 ml (1 tbsp.) apple cider vinegar
  10. 30 ml (2 tbsp) olive oil
  11. Bread croutons
  12. Salt and pepper to taste.

Preparation

  1. In a bowl, combine salmon, apples, dill, coriander, chives, shallots, capers, lemon zest, apple cider vinegar and olive oil. Cover and refrigerate for 1 hour. Check seasoning.
  2. Serve with bread croutons.

NB: For a leaner tartar, choose wild salmon.
