TUNA TARTARE

Ingredients
- 5 ml (1 tsp.) mashed horseradish
- 1 lime, juice
- 30 ml (2 tablespoons) sesame oil
- 5 ml (1 tsp.) maple syrup
- Hot sauce to taste
- 1 mango, diced
- 1 green apple, brunoise
- 15 ml (1 tbsp.) parsley leaves, chopped
- 30 ml (2 tbsp.) coriander leaves, chopped
- 1 tomato, diced
- 300 g (10 oz) AKI Sushi raw tuna, cubed
- Salt and pepper to taste
Topping
- AKI Sushi Masago fish roe
- Micro pods for garnish
- Croutons
Preparation
- In a bowl, mix horseradish, lime juice, sesame oil, maple syrup and hot sauce.
- Add mango, apple, parsley, coriander and tomato.
- Add the Aki Sushi tuna. Check the seasoning.
- Garnish plates with fish roe and microfoam.
- Serve with croutons.
