Tuna tartare

TUNA TARTARE

Portions : 4 - Preparation time : 20 minutes

Ingredients

  • 5 ml (1 tsp.) mashed horseradish
  • 1 lime, juice
  • 30 ml (2 tablespoons) sesame oil
  • 5 ml (1 tsp.) maple syrup
  • Hot sauce to taste
  • 1 mango, diced
  • 1 green apple, brunoise
  • 15 ml (1 tbsp.) parsley leaves, chopped
  • 30 ml (2 tbsp.) coriander leaves, chopped
  • 1 tomato, diced
  • 300 g (10 oz) AKI Sushi raw tuna, cubed
  • Salt and pepper to taste

Topping

  • AKI Sushi Masago fish roe
  • Micro pods for garnish
  • Croutons

Preparation

  1. In a bowl, mix horseradish, lime juice, sesame oil, maple syrup and hot sauce.
  2. Add mango, apple, parsley, coriander and tomato.
  3. Add the Aki Sushi tuna. Check the seasoning.
  4. Garnish plates with fish roe and microfoam.
  5. Serve with croutons.
