Ingredients
Mayonnaise
- 15 ml (1 tablespoon) mustard
- 1 egg, yolk
- 1/2 lemon, juice
- 125 ml (1/2 cup) canola oil
- 60 ml (4 tbsp.) olive oil
- salt and pepper to taste
Tartar
- 200 g (7 oz) fresh tuna, small cubes
- 60 ml (1/4 cup) fresh chives, chopped
- 125 ml (1/2 cup) basil leaves, chopped
- 8 to 10 green olives, chopped
- 2 shallots, chopped
- Bread croutons
- Salt and pepper to taste
Preparation
- To prepare mayonnaise, in a bowl, mix mustard, egg yolk, lemon juice, salt and pepper.
- Whisk in the canola oil and olive oil in small successive streams. Check seasoning.
- In a bowl, combine tuna cubes, chives, basil, olives and shallots.
- Stir in some of the prepared mayonnaise. Check seasoning.
- Serve with bread croutons.
