Tuna tartare with green olives

Ingredients

Mayonnaise

  • 15 ml (1 tablespoon) mustard
  • 1 egg, yolk
  • 1/2 lemon, juice
  • 125 ml (1/2 cup) canola oil
  • 60 ml (4 tbsp.) olive oil
  • salt and pepper to taste

Tartar

  • 200 g (7 oz) fresh tuna, small cubes
  • 60 ml (1/4 cup) fresh chives, chopped
  • 125 ml (1/2 cup) basil leaves, chopped
  • 8 to 10 green olives, chopped
  • 2 shallots, chopped
  • Bread croutons
  • Salt and pepper to taste

Preparation

  1. To prepare mayonnaise, in a bowl, mix mustard, egg yolk, lemon juice, salt and pepper.
  2. Whisk in the canola oil and olive oil in small successive streams. Check seasoning.
  3. In a bowl, combine tuna cubes, chives, basil, olives and shallots.
  4. Stir in some of the prepared mayonnaise. Check seasoning.
  5. Serve with bread croutons.
