Tuna and grapefruit tartar

Ingredients

  • 300 g (10 oz) Albacore tuna steak, small cubes
  • 5 ml (1 tsp.) Sambal Oelek
  • 1 lemon, zest
  • 5 ml (1 tsp.) coriander seeds, ground
  • 5 ml (1 tsp.) dill
  • 60 ml (4 tbsp.) gray shallot, finely chopped
  • ½ clove garlic, puréed
  • 60 ml (4 tbsp.) olive oil
  • 1 pink or yellow grapefruit, peeled raw, cut into segments
  • salt and pepper to taste

Preparation

  1. In a bowl, combine tuna, hot sauce, lemon zest, coriander, dill, shallot, garlic, olive oil, salt and pepper. Check seasoning.
  2. Add grapefruit segments.
  3. Serve with bread croutons.
