Tuna tartare with mayonnaise

Ingredients

Mayonnaise

  • 15 ml (1 tablespoon) mustard
  • 1 egg, yolk
  • 1/2 lemon, juice
  • 125 ml (1/2 cup) canola oil
  • 60 ml (1/4 cup) olive oil
  • salt and pepper to taste
  • 200 g (7 oz) fresh tuna, small cubes
  • 60 ml (1/4 cup) fresh chives, chopped
  • 125 ml (1/2 cup) basil leaves, chopped
  • 30 ml (2 tbsp.) parsley leaves, chopped
  • 6 pickles in vinegar, chopped
  • 30 ml (2 tbsp.) capers, chopped
  • 2 shallots, chopped
  • black pepper and 1 pinch fleur de sel
  • Bread croutons

Preparation

  1. To prepare the mayonnaise, mix the mustard, egg yolk, lemon juice, salt and pepper in a bowl.
  2. Whisk in the canola oil and olive oil in small streams.
  3. In a bowl, combine the tuna cubes, chives, basil, parsley, gherkins, capers and shallots.
  4. Add some of the prepared mayonnaise. Check seasoning.
  5. Serve on a crouton or parmesan crisp.

NB: For a spicy mayonnaise, add Tabasco.
