Ingredients
Mayonnaise
- 15 ml (1 tablespoon) mustard
- 1 egg, yolk
- 1/2 lemon, juice
- 125 ml (1/2 cup) canola oil
- 60 ml (1/4 cup) olive oil
- salt and pepper to taste
- 200 g (7 oz) fresh tuna, small cubes
- 60 ml (1/4 cup) fresh chives, chopped
- 125 ml (1/2 cup) basil leaves, chopped
- 30 ml (2 tbsp.) parsley leaves, chopped
- 6 pickles in vinegar, chopped
- 30 ml (2 tbsp.) capers, chopped
- 2 shallots, chopped
- black pepper and 1 pinch fleur de sel
- Bread croutons
Preparation
- To prepare the mayonnaise, mix the mustard, egg yolk, lemon juice, salt and pepper in a bowl.
- Whisk in the canola oil and olive oil in small streams.
- In a bowl, combine the tuna cubes, chives, basil, parsley, gherkins, capers and shallots.
- Add some of the prepared mayonnaise. Check seasoning.
- Serve on a crouton or parmesan crisp.
NB: For a spicy mayonnaise, add Tabasco.
