Peach and almond tart

Cooking time : 40 to 45 minutes

Ingredients

  • 1 sheet puff pastry or standard butter pastry dough
  • 2 eggs
  • 190 ml (3/4 cup) 35% cream
  • 5 ml (1 tsp.) vanilla extract
  • 125 ml (1/2 cup) butter, soft
  • 125 ml (1/2 cup) sugar
  • 125 ml (1/2 cup) almond powder
  • 1 pinch salt
  • 90 ml (6 tbsp) rum
  • 4 to 6 peaches, halved
  • 125 ml (½ cup) slivered almonds

Preparation

  1. Preheat oven, rack in center, to 190°C (375°F).
  2. Place the puff pastry in a pie dish and prick the bottom with a fork.
  3. Cover the pastry with parchment paper and sprinkle with dried beans, baking balls or similar. Bake for 10 minutes.
  4. Meanwhile, whisk together the eggs, cream, vanilla, butter and sugar in a bowl.
  5. Stir in the almond powder, pinch of salt and rum.
  6. Remove the paper, arrange the peaches and pour the mixture around them.
  7. Sprinkle the flaked almonds over the top and bake in the oven for 25-30 minutes.
  8. Allow to cool before serving.
