Ingredients
- 1 sheet puff pastry or standard butter pastry dough
- 2 eggs
- 190 ml (3/4 cup) 35% cream
- 5 ml (1 tsp.) vanilla extract
- 125 ml (1/2 cup) butter, soft
- 125 ml (1/2 cup) sugar
- 125 ml (1/2 cup) almond powder
- 1 pinch salt
- 90 ml (6 tbsp) rum
- 4 to 6 peaches, halved
- 125 ml (½ cup) slivered almonds
Preparation
- Preheat oven, rack in center, to 190°C (375°F).
- Place the puff pastry in a pie dish and prick the bottom with a fork.
- Cover the pastry with parchment paper and sprinkle with dried beans, baking balls or similar. Bake for 10 minutes.
- Meanwhile, whisk together the eggs, cream, vanilla, butter and sugar in a bowl.
- Stir in the almond powder, pinch of salt and rum.
- Remove the paper, arrange the peaches and pour the mixture around them.
- Sprinkle the flaked almonds over the top and bake in the oven for 25-30 minutes.
- Allow to cool before serving.
