Leek and feta tart

Ingredients

  • 3 leek whites, sliced
  • 60 ml (4 tablespoons) olive oil
  • 1 lemon, juice
  • 15 ml (1 tbsp.) maple syrup
  • 1 egg, sliced
  • 60 ml (4 tbsp.) 35% cream
  • 1 pie crust
  • 250 ml (1 cup) feta cheese, cubed
  • Salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 190°C (375°F).
  2. In a hot skillet, sear the leeks in the oil for 2 to 3 minutes.
  3. Add lemon juice, maple syrup, salt and pepper.
  4. In a bowl, whisk together the egg and cream.
  5. Add leek and mix.
  6. Place the pastry in a tart tin.
  7. Pour the mixture into the tin, cover with feta and bake for 30 minutes.
