Ingredients
- 3 leek whites, sliced
- 60 ml (4 tablespoons) olive oil
- 1 lemon, juice
- 15 ml (1 tbsp.) maple syrup
- 1 egg, sliced
- 60 ml (4 tbsp.) 35% cream
- 1 pie crust
- 250 ml (1 cup) feta cheese, cubed
- Salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 190°C (375°F).
- In a hot skillet, sear the leeks in the oil for 2 to 3 minutes.
- Add lemon juice, maple syrup, salt and pepper.
- In a bowl, whisk together the egg and cream.
- Add leek and mix.
- Place the pastry in a tart tin.
- Pour the mixture into the tin, cover with feta and bake for 30 minutes.
