Creamy apple and raisin tart with rum and vanilla

Ingredients

  • 2 eggs
  • 60 ml (4 tablespoons) sugar
  • 125 ml (1/2 cup) 15% cooking cream
  • 1 orange, zest
  • 1 pinch salt
  • 125 ml (1/2 cup) flour
  • 60 ml (4 tbsp.) dark rum
  • 15 ml (1 tbsp.) natural vanilla extract
  • 15 ml (1 tbsp) baking powder
  • 125 ml (1/2 cup) raisins (brown or blond)
  • 1 kg apples, peeled and sliced
  • 1 sheet sweet pastry dough

Preparation

  1. Preheat oven, rack in center, to 190°C (375°F).
  2. In a bowl, whisk the eggs, then add the sugar and mix until frothy and lightly floured.
  3. Add the cream, orange zest, salt, flour, rum, vanilla, baking powder and raisins.
  4. Once the mixture is smooth, add the apples to coat.
  5. Place the pastry in a high rimmed tart tin, spread the apples over the pastry and bake for 45 minutes.
