Ingredients
- 2 eggs
- 60 ml (4 tablespoons) sugar
- 125 ml (1/2 cup) 15% cooking cream
- 1 orange, zest
- 1 pinch salt
- 125 ml (1/2 cup) flour
- 60 ml (4 tbsp.) dark rum
- 15 ml (1 tbsp.) natural vanilla extract
- 15 ml (1 tbsp) baking powder
- 125 ml (1/2 cup) raisins (brown or blond)
- 1 kg apples, peeled and sliced
- 1 sheet sweet pastry dough
Preparation
- Preheat oven, rack in center, to 190°C (375°F).
- In a bowl, whisk the eggs, then add the sugar and mix until frothy and lightly floured.
- Add the cream, orange zest, salt, flour, rum, vanilla, baking powder and raisins.
- Once the mixture is smooth, add the apples to coat.
- Place the pastry in a high rimmed tart tin, spread the apples over the pastry and bake for 45 minutes.
