Ingredients
- 4 slices of country bread
- 250 ml (1 cup) cheddar cheese, grated
- 1 red pepper, finely diced
- 1 shallot, finely chopped
- 60 ml (4 tbsp) parsley leaves, chopped
- 30 ml (2 tbsp) olive oil
- 1 pinch of cayenne pepper
- 30 ml (2 tbsp) maple syrup
- 30 ml (2 tbsp) red wine vinegar
- 4 eggs
- 60 ml (4 tbsp) white vinegar
- 2 avocados, sliced
- 8 slices of bacon, cooked and crispy
- Salt and pepper to taste
Preparation
- Preheat the oven, with the rack in the center on broil.
- On a baking sheet covered with a silicone mat, place the slices of bread, on which you spread the cheese and let cook in the oven, until you obtain a melted and grilled cheese. Set aside.
- In the meantime, in a bowl, mix the pepper, shallot, parsley, oil, chili, maple syrup, vinegar, salt and pepper. Check the seasoning. Set aside.
- Crack each egg into a different small container.
- In a saucepan of simmering salted water, add the white vinegar and quickly place the eggs in the water, one by one. Let each egg cook for 3 minutes
- Remove and place the eggs on absorbent paper. Salt and pepper.
- On the cheese of each slice of bread, distribute the avocado slices, place an egg, 2 slices of bacon and spread the pepper salsa.
