Brunch toast

Tartine brunch

Ingredients

  • 4 slices of country bread
  • 250 ml (1 cup) cheddar cheese, grated
  • 1 red pepper, finely diced
  • 1 shallot, finely chopped
  • 60 ml (4 tbsp) parsley leaves, chopped
  • 30 ml (2 tbsp) olive oil
  • 1 pinch of cayenne pepper
  • 30 ml (2 tbsp) maple syrup
  • 30 ml (2 tbsp) red wine vinegar
  • 4 eggs
  • 60 ml (4 tbsp) white vinegar
  • 2 avocados, sliced
  • 8 slices of bacon, cooked and crispy
  • Salt and pepper to taste

Preparation

  1. Preheat the oven, with the rack in the center on broil.
  2. On a baking sheet covered with a silicone mat, place the slices of bread, on which you spread the cheese and let cook in the oven, until you obtain a melted and grilled cheese. Set aside.
  3. In the meantime, in a bowl, mix the pepper, shallot, parsley, oil, chili, maple syrup, vinegar, salt and pepper. Check the seasoning. Set aside.
  4. Crack each egg into a different small container.
  5. In a saucepan of simmering salted water, add the white vinegar and quickly place the eggs in the water, one by one. Let each egg cook for 3 minutes
  6. Remove and place the eggs on absorbent paper. Salt and pepper.
  7. On the cheese of each slice of bread, distribute the avocado slices, place an egg, 2 slices of bacon and spread the pepper salsa.
