Ingredients
Tofu Bacon
- 45 ml (3 tbsp) soy sauce
- 5 ml (1 tsp) onion powder
- 1 clove garlic, pureed
- 60 ml (4 tbsp) maple syrup
- 30 ml (2 tbsp) canola oil
- 15 ml (1 tbsp) ketchup
- 10 ml (2 tsp) liquid smoke
- 1 block firm or extra-firm tofu, thinly sliced (3.5 mm)
- Pepper to taste
- 60 ml (4 tbsp) olive oil
- 15 ml (1 tbsp) reduced balsamic vinegar
- 1 tomato, cubed
- 15 ml (1 tbsp) chopped shallot
- 4 slices country bread, toasted
- 2 avocados, slices
- Salt and pepper to taste
Preparation
- Preheat the oven, rack in the center to 200 °C (400 °F).
- In a bowl, mix the soy sauce, onion powder, garlic, maple syrup, oil, ketchup, liquid smoke and pepper.
- In the mixture, add and marinate the tofu, in the refrigerator, for 3 hours.
- On a baking sheet, spread the tofu slices and cook in the oven for 18 minutes, the time needed to obtain crispy slices on both sides.
- In the meantime, in a bowl, mix the oil, balsamic vinegar, tomato, shallot, salt and pepper. Check the seasoning of this salsa
- On each slice of bread, spread the avocado, tofu bacon and small tomato salsa.
