Avocado and tofu bacon toast

Ingredients

Tofu Bacon

  • 45 ml (3 tbsp) soy sauce
  • 5 ml (1 tsp) onion powder
  • 1 clove garlic, pureed
  • 60 ml (4 tbsp) maple syrup
  • 30 ml (2 tbsp) canola oil
  • 15 ml (1 tbsp) ketchup
  • 10 ml (2 tsp) liquid smoke
  • 1 block firm or extra-firm tofu, thinly sliced ​​(3.5 mm)
  • Pepper to taste
  • 60 ml (4 tbsp) olive oil
  • 15 ml (1 tbsp) reduced balsamic vinegar
  • 1 tomato, cubed
  • 15 ml (1 tbsp) chopped shallot
  • 4 slices country bread, toasted
  • 2 avocados, slices
  • Salt and pepper to taste

Preparation

  1. Preheat the oven, rack in the center to 200 °C (400 °F).
  2. In a bowl, mix the soy sauce, onion powder, garlic, maple syrup, oil, ketchup, liquid smoke and pepper.
  3. In the mixture, add and marinate the tofu, in the refrigerator, for 3 hours.
  4. On a baking sheet, spread the tofu slices and cook in the oven for 18 minutes, the time needed to obtain crispy slices on both sides.
  5. In the meantime, in a bowl, mix the oil, balsamic vinegar, tomato, shallot, salt and pepper. Check the seasoning of this salsa
  6. On each slice of bread, spread the avocado, tofu bacon and small tomato salsa.
