GOAT CHEESE AND GRILLED VEGETABLE TARTINE
Portions : 4 - Preparation : 20 minutes - Cooking time : 6 minutes
Ingredients
- 4 large slices country-style bread
- 30 ml (2 tablespoons) butter
- 250 ml (1 cup) fresh goat cheese
- 125 ml (1/2 cup) walnuts, chopped
- 60 ml (4 tbsp.) honey
- 4 to 8 slices bacon, cooked crisp
- salt and pepper to taste
Roasted vegetables
- 120 ml (8 tbsp.) olive oil
- 90 ml (6 tbsp) lemon juice
- 2 garlic cloves, chopped
- 8 basil leaves, finely chopped
- 5 ml (1 tsp.) herbes de Provence blend
- 4 button or Café mushrooms, cut into 4 pieces
- 4 eggplant slices, 1/4'' thick
- 1 onion, cut into 8
- 1 zucchini, cut into large slices
Preparation
- Preheat barbecue to maximum heat
- Mix goat's cheese, walnuts, honey and a little salt and pepper in a bowl.
- Butter the bread slices.
- Toast bread slices on barbecue grill for 1-2 minutes.
- In a bowl, combine the olive oil, lemon juice, garlic, basil and herbes de Provence, then add the mushrooms, eggplant, onion and zucchini.
- On the barbecue grill, sear the vegetables for 3 to 4 minutes on each side.
- Once nicely colored, remove and set aside.
- Spread each slice with fresh goat's cheese bread, top with grilled vegetables and bacon pieces, and serve.
