Ingredients
- 120 ml (8 tablespoons) white wine vinegar
- 1 lemon, juice
- 1 ml (1/4 tsp.) liquid smoke
- 15 ml (1 tbsp.) maple syrup
- 120 ml (8 tbsp.) olive oil
- 8 fresh herring fillets
- 2 red onions, sliced
- 4 slices toasted country bread
- 60 ml (4 tbsp.) cream cheese
- 1 green apple, thinly sliced
- 4 radishes, thinly sliced
- 45 ml (3 tbsp.) chives, snipped
- salt and pepper to taste
Preparation
- Preheat barbecue to maximum.
- In a bowl, combine vinegar, lemon juice, smoked liquid, maple syrup, olive oil, salt and pepper.
- Brush the prepared mixture over the fish fillets.
- Place the fish fillets on the barbecue grill and cook for 3 minutes on each side.
- Remove and marinate the fillets in the prepared mixture for a further 20 minutes.
- On the barbecue grill, grill the onion rings for 2-3 minutes on each side.
- On each slice of toasted bread, spread the cream cheese, spread the apple slices, place 2 fish fillets, spread the radish slices, chives and some of the marinade liquid.
- Serve with a green salad.
