Feta and bacon sandwich

Ingredients

  • 2 avocados, cubed
  • Tasbasco to taste
  • 30 ml (2 tablespoons) red wine vinegar
  • 1 clove garlic, minced
  • 4 slices baguette bread, toasted
  • 250 ml (1 cup) feta cheese, cubed
  • 4 hard-boiled eggs, sliced
  • 30 ml (2 tbsp.) maple syrup
  • 4 to 6 basil leaves, chopped
  • 120 ml (8 tbsp.) olive oil
  • 8 slices bacon, cooked crisp
  • Salt and pepper to taste

Preparation

  1. In a bowl, using a hand blender, puree avocado cubes, Tabasco, vinegar, garlic, salt and pepper. Check seasoning.
  2. Spread the avocado purée on each slice of bread.
  3. Divide the feta, egg slices, maple syrup, basil, olive oil and bacon between the slices of bread.
