Ingredients
- 2 avocados, cubed
- Tasbasco to taste
- 30 ml (2 tablespoons) red wine vinegar
- 1 clove garlic, minced
- 4 slices baguette bread, toasted
- 250 ml (1 cup) feta cheese, cubed
- 4 hard-boiled eggs, sliced
- 30 ml (2 tbsp.) maple syrup
- 4 to 6 basil leaves, chopped
- 120 ml (8 tbsp.) olive oil
- 8 slices bacon, cooked crisp
- Salt and pepper to taste
Preparation
- In a bowl, using a hand blender, puree avocado cubes, Tabasco, vinegar, garlic, salt and pepper. Check seasoning.
- Spread the avocado purée on each slice of bread.
- Divide the feta, egg slices, maple syrup, basil, olive oil and bacon between the slices of bread.
