Berry Tiramisu

Ingredients

  • 1 500g jar of mascarpone
  • 400 ml of 35% whipping cream
  • 1 lemon, zest
  • 15 ml (1 tbsp) vanilla extract
  • 1 pinch of salt
  • 30 ml (2 tbsp) Amaretto (optional)
  • 180 ml (3/4 cup) icing sugar
  • 500 ml (2 cups) canned or jarred peaches (keep the juice)
  • 250 ml (1 cup) orange juice
  • 24 to 30 lady finger cookies
  • 500 ml (2 cups) red berries

Preparation

  1. In a bowl, using a hand mixer, mix the mascarpone, cream, lemon zest, vanilla extract, pinch of salt, Amaretto, icing sugar and whisk until smooth. and firm.
  2. In a bowl, mix the peach juice and orange juice.
  3. Dip each biscuit in the juice mixture to soak them, then divide them into each glass.
  4. Cut the peaches into cubes.
  5. In each glass, on top of the biscuit, add a layer of prepared cream, spread the red berries, add another layer of cream, spread the peach cubes and finish with a layer of cream.
  6. Cover each glass with plastic food wrap and reserve in the refrigerator until serving.
