Roasted tomatoes

Ingredients

  • 16 small vine tomatoes on branches
  • 1/2 sprig rosemary
  • 2 sprigs thyme
  • 1 clove garlic, minced
  • 120 ml (8 tbsp) olive oil
  • 15 ml (1 tbsp) maple syrup
  • Salt and pepper to taste

Preparation

  • Preheat the oven, rack in the center to 200 °C (400 °F).
  • Using the tip of a paring knife, prick each tomato.
  • Pluck the leaves from the rosemary and thyme, then finely chop the sprigs.
  • In a bowl, mix the garlic, rosemary, thyme, olive oil, maple syrup, salt and pepper. Check the seasoning.
  • Add the tomatoes to coat them with the seasoning.
  • On a baking sheet covered with parchment paper or a silicone mat, spread the tomatoes and bake for 5 to 8 minutes.
  • Let cool.
