Tortellini (cream sauce)

TORTELLINI (CREAM SAUCE)

Portions : 4 - Preparation : 10 minutes - Cooking : 15 minutes

Ingredients

  • 4 portions tortellini
  • 250 ml (1 cup) celery, brunoise
  • 250 ml (1 cup) carrot, brunoise
  • 60 ml (4 tbsp.) olive oil
  • 2 cloves garlic, minced
  • 1.5 l (6 cups) chicken stock
  • 125 ml (½ cup) 35% cream
  • 60 ml (4 tbsp.) white balsamic vinegar
  • 250 ml (1 cup) arugula
  • 250 ml (1 cup) grated Parmesan cheese
  • Salt and pepper to taste

Preparation

  1. Cook the tortellini in a large pot of boiling, salted water.
  2. Meanwhile, in a hot saucepan, sauté celery and carrot in olive oil for 2 minutes.
  3. Add the garlic and stock and cook for 10 minutes.
  4. Add cream, balsamic vinegar and arugula. Check seasoning.
  5. Place the tortellini, stock and vegetables in each bowl, followed by the Parmesan.
