TORTELLINI (CREAM SAUCE)

Ingredients
- 4 portions tortellini
- 250 ml (1 cup) celery, brunoise
- 250 ml (1 cup) carrot, brunoise
- 60 ml (4 tbsp.) olive oil
- 2 cloves garlic, minced
- 1.5 l (6 cups) chicken stock
- 125 ml (½ cup) 35% cream
- 60 ml (4 tbsp.) white balsamic vinegar
- 250 ml (1 cup) arugula
- 250 ml (1 cup) grated Parmesan cheese
- Salt and pepper to taste
Preparation
- Cook the tortellini in a large pot of boiling, salted water.
- Meanwhile, in a hot saucepan, sauté celery and carrot in olive oil for 2 minutes.
- Add the garlic and stock and cook for 10 minutes.
- Add cream, balsamic vinegar and arugula. Check seasoning.
- Place the tortellini, stock and vegetables in each bowl, followed by the Parmesan.
