Shrimp tortillas

SHRIMP TORTILLAS

Portions : 4 - Preparation : 10 minutes - Cooking : 5 minutes

Ingredients

  • 1 cucumber, diced
  • 1 clove garlic, minced
  • 15 ml (1 tablespoon) ginger, grated
  • 30 ml (2 tbsp.) honey
  • 90 ml (6 tbsp) olive oil
  • 60 ml (4 tbsp.) lime juice
  • 16 to 20 shrimp, raw and peeled
  • 1/2 red onion, thinly sliced
  • 15 ml (1 tbsp.) sweet paprika
  • 8 wheat or corn tortillas, 6 to 8'' long
  • 75 ml (5 tbsp.) coriander leaves, chopped
  • 60 ml (4 tbsp.) feta cheese, crumbled
  • Qs hot sauce
  • Salt and pepper to taste

Preparation

  1. In a bowl, combine cucumber cubes, garlic, ginger, 15 ml (1 tbsp) honey, 45 ml (3 tbsp) olive oil and lime juice. Check seasoning.
  2. In a hot skillet, sear shrimp and onion in remaining olive oil, 2 minutes per side.
  3. Add remaining honey, paprika, stir and check seasoning. Add a little hot sauce to taste.
  4. Meanwhile, heat tortillas.
  5. Divide the shrimp, cucumber salsa, cilantro and feta among the tortillas.
